About the Event
Chef: David France, Chef de Cuisine
Price: $65 per person / $35 for the optional wine pairing
First Course:
Beef tartar, toasted nori, tahini seasame lavash, preserved egg yolks & a dikon micro-salad
Second Course:
House-cured artic char, butter poached new potatoes, smoked farmer's cheese, pumpernickel croutons, & a stone ground mustard vinaigrette
Entrée Course:
Paella Valencia with chorizo iberico ham, quail, mussels, clams & Spanish saffron
Dessert:
Buttermilk panna cotta with brûléed baked peaches, thyme sablé crumble & fois gras
